Ingredients:

  • 3 large eggs (18g protein)
  • 1/4 cup feta cheese (6g protein)
  • 1 cup fresh arugula
  • 1 tbsp olive oil
  • Salt and pepper to taste

Directions:

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Add spinach and cook until wilted.
  3. Beat the eggs in a bowl and pour into the skillet.
  4. Sprinkle feta cheese over the eggs and season with salt and pepper.
