Ingredients:
- 3 large eggs (18g protein)
- 1/4 cup feta cheese (6g protein)
- 1 cup fresh arugula
- 1 tbsp olive oil
- Salt and pepper to taste
Directions:
- Heat olive oil in a non-stick skillet over medium heat.
- Add spinach and cook until wilted.
- Beat the eggs in a bowl and pour into the skillet.
- Sprinkle feta cheese over the eggs and season with salt and pepper.
- Cook until the eggs are set, fold the omelette, and serve.
