Ingredients:
- 1 grilled chicken breast (30g protein)
- 1/2 cup cooked quinoa (4g protein)
- 1 cup mixed greens
- 1/4 cup cherry tomatoes, halved
- 1/4 cup diced cucumber
- 2 tbsp feta cheese (2g protein)
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Directions:
- Grill chicken breast until fully cooked and slice.
- In a large bowl, combine quinoa, mixed greens, cherry tomatoes, cucumber, and feta cheese.
- Add grilled chicken on top.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper and serve.
