Ingredients:

  • 1 grilled chicken breast (30g protein)
  • 1/2 cup cooked quinoa (4g protein)
  • 1 cup mixed greens
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup diced cucumber
  • 2 tbsp feta cheese (2g protein)
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Directions:

  1. Grill chicken breast until fully cooked and slice.
  2. In a large bowl, combine quinoa, mixed greens, cherry tomatoes, cucumber, and feta cheese.
  3. Add grilled chicken on top.
  4. Drizzle with olive oil and lemon juice.
  5. Season with salt and pepper and serve.
