Ingredients:
- 8 oz shrimp (24g protein)
- 1 cup cauliflower rice
- 1 cup mixed vegetables (carrots, bell peppers, broccoli)
- 1 tbsp coconut aminos
- 1 tbsp olive oil
Directions:
- Heat olive oil in a skillet and cook shrimp until pink.
- Add mixed vegetables and stir-fry for 5 minutes.
- Stir in cauliflower rice and coconut aminos. Cook until heated through.
